Not much to update you on today. I was happy to not have any plans last night after being in Philadelphia Monday and Tuesday. I went to pick up the rest of my stuff at my old apartment since our lease officially ends tomorrow and handed in my keys. Since this took some time I wanted to throw together a dinner that would be healthy but quick.
A few months ago when I used to go to the gym after work (now I go before) I wouldn’t get home until 8 or 9 at night. This chicken recipe (if it can even be called a recipe) is what I would make often during those nights for a quick and easy dinner. I resorted to this recipe last night and grilled three chicken breasts (one for me, two for Tom) on the stove. You could easily use the same amount of seasoning or olive oil if you were making 4-5 chicken breasts as well (I had some left over).
Easy Grilled Chicken Recipe
- 3 tsp Mrs. Dash Seasoning Blend Italian Medley
- 1/2 cup olive oil
- 3 boneless, skinless chicken breasts
In a small mixing bowl, combine 3 tsp of seasoning with 1/2 cup olive oil and mix. Place a pan on the stove and turn the heat to medium-high. Coat each chicken breast in the olive oil/seasoning mixture before placing in the pan. Let the first side cook about 5 minutes until the side facing down is golden brown. Flip and repeat until chicken is cooked through (usually 10-15 minutes). Serve with a side of rice and veggies for a quick and easy dinner!
Side note: we heated up Fresh Direct’s Sides in a Snap Vegetable Barley Risotto. While we were eating I kept mentioning how salty I thought the risotto tasted. About a half hour after our meal Tom kept downing water because he said he felt so thirsty. After looking at the nutrition label online today (I was curious) I saw the risotto was 25% sodium (600 mg per serving). While Tom didn’t necessarily dislike the risotto, I wasn’t a fan and I wouldn’t recommend it as a side. Next time I’ll be making some brown rice instead!
