Weekend Recap 9.28.15 – Field passes and good food

I haven’t had a chance to check in since last Wednesday so I figured I’d do a quick recap of the past few days.

I took a cardio and core workout class at the Columbia gym last Wednesday and it left my calves sore for days.

Dinner Wednesday night was baked potato soup from Skinnytaste and it was delicious but next time I’ll be adding more potato since it came out tasting more like califlower soup than potato soup.  
I ended the night with one of the pumpkin bars I had made earlier in the week. I put it in the microwave for 45 seconds and then drizzled it with almond butter and it was the perfect dessert to enjoy while studying.

Thursday was a busy day. I had two classes then went home to get in a quick Insanity workout before showering and getting ready for the Giants game. Due to the number of exams I have coming up I think it’ll be my last game for a few weeks but it was definitely a good decision to make it to this one. My aunt won a lottery for field tickets so we got to go on the field during the teams practice. We were SO close during their warm ups that if we reached out we could touch them (but we didn’t do that, because that’s creepy).


 My best friend had just gotten back from a ten day Euro trip and I was so excited she could make it to the game with me so I could hear about her trip.

Friday I took off from working out to study all day and Saturday was spent in my anatomy and physiology lab. After my lab I had just enough time to do some work before showering and getting ready for dinner with Tom. We were celebrating our five year anniversary which was on the 24th and Tom had made reservations at Amanda’s in Hoboken for us to celebrate. This is by far one of my favorite restaurants in Hoboken. It’s expensive and has a limited menu but everything I’ve tried has been phenomenal and it’s a great place to go for special occasions.

It’s been a good five years.

At dinner I got an arugula salad with strawberries, pecans, pomegranate, and white balsamic vinaigrette as an appetizer and the roasted chicken breast as my entree. I think I’ve gotten this chicken three times, it’s that good.

I didn’t take a picture but for dessert we got the apple strudel and the cheesecake. I usually don’t discriminate when it comes to dessert but the cheesecake was unreal.

I’m just now realizing how much good food was had this past weekend. Our breakfast Sunday morning was no different:


A cheese omelette with bell peppers and tomatoes with breakfast potatoes and an english muffin.

This week has already been crazy with studying and prepping for my upcoming exams and quizzes so I don’t know what the rest of this week will look like blogging wise but if I don’t check in for a few more days I hope you have a great week!
