What I Ate Wednesday #8 – flourless pumpkin bars 

I had to track my food yesterday for my developmental psychology class so I figured it would only make sense to do a WIAW post today.

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONSBreakfast has been the same for a couple weeks now, plain Greek yogurt with either slivered almonds or granola. Nice and quick before I head out the door.  It takes me about an hour to get to Columbia and once I got off the subway I ate an apple on my way to class. I usually try to have fruit beforehand or some nuts during class since my stomach always seems to growl towards the end. I ate a mixture of dried strawberries and peanuts after class on my way to my next class.

After my second class I headed to the gym to complete the following workout:

3 x 12 cable shoulder external rotation 10 lbs

3 x 12 cable tricep extensions 40 lbs

3 x 12 cable bicep curls 30 lbs

3 x 12 read delt row 40 lbs

30 min dual arc trainer

Ab circuit with Russian twists, bicycles, jack knives (or ab pikes?), and planks repeated 3 times

After the gym I grabbed a Greek salad from the library cafe only to find that the dressing and the lettuce were both frozen so I switched it out with a chef salad which had turkey, provolone, tomatoes and lettuce. I didn’t take a picture of these since I was eating in the library lounge and felt a awkward photographing my food.

Once I finished lunch I grabbed a table in one of the reading rooms to do some studying for physics and catch up on developmental psychology readings. I usually have a class at 4:10 on Tuesdays but it was cancelled for the Jewish holiday which worked out well since I had a lot of work to do.  I enjoyed a ginger peach tea from the cafe to while studying and it was so good. I’ve been drinking a lot more tea lately since I need a little pick-me-up in the afternoons but find I can’t drink coffee past 2 pm or I won’t sleep well at night. I studied until 5 pm and then stopped at the grocery store for some ingredients to make pumpkin bars after dinner.

Dinner was a quick one – salad with tomatoes, carrots and olives and chicken stir fry.

After dinner I made flourless pumpkin almond butter bars with coconut (I omitted the chocolate) from Ambitious Kitchen and snacked on these dark chocolate coconut pieces while they cooked. Can you tell I love coconut?
I picked these up at Morton Williams when I was getting the ingredients for the pumpkin bars and they are so delicious. Tom tried a piece and said they taste just like almond joy. Definitely a great healthier alternative!

Once the pumpkin bars were done I sampled one and was surprised at just how good they are. They’re very moist and don’t hold together as well as this recipe (they are more of a cake consistency) but are really delicious and don’t have flour which is an added bonus.   In a typical day I usually don’t snack or have dessert after dinner since we typically eat pretty late so this was a little more than I would usually eat at night but I definitely have my snacky days and this was one of them.

After making this pumpkin recipe I’m excited to try a few other versions of Monique from Ambitious Kitchen’s pumpkin bars. I will probably try the chocolate chip coconut flour pumpkin bars next.
